Sorry to say, but these sensors won't appear in Apple Home. Only supported Mi zigbee sensors and devices are homekit compatible. Look for Homebridge and Home Assistant. I have the same hub using Xiaomi Gateway 3 integration for home assistant and I'm able expose the sensors to HomeKit that way.

For the Aqara hub, you can't just use the standard reset (holding down button on hub for 10 seconds), you also have to do a full reset (standard reset + 10 quick clicks on the hub button), and then the gateway is once again discoverable by Homekit.
